If you're looking for a quick, delicious, and budget-friendly meal, this Alfredo Pasta Roni with sausage, mushrooms, and broccoli is a great option. It’s packed with flavor, easy to make, and a great way to add some extra protein and veggies to a simple boxed pasta dish.

Ingredients:

  • 1 box of Alfredo Pasta Roni

  • 1 beef sausage (or kielbasa), sliced

  • 1 cup frozen broccoli. You can you fresh as well.

  • 4-5 button mushrooms, sliced

  • 1 tablespoon olive oil (or butter)

  • 2 cups water (as per Pasta Roni instructions)

  • 1/2 cup milk (as per Pasta Roni instructions)

  • Optional: Garlic powder, black pepper, or Parmesan cheese for extra flavor

Instructions:

  1. Cook the sausage – Heat a pan over medium-high heat and add 1 tablespoon of olive oil. Add the sliced beef sausage and cook for about 3-5 minutes, until browned.

  2. Add mushrooms – Toss in the sliced mushrooms and sauté for another 3-4 minutes until they soften and start browning.

  3. Prepare the Pasta Roni – In a separate pot, follow the box instructions: add water, milk, and pasta. Bring to a boil, then reduce heat and simmer for the recommended time (usually about 5 minutes), stirring occasionally.

  4. Add the broccoli – When the pasta is about halfway done, stir in the frozen broccoli so it can cook with the pasta.

  5. Combine everything – Once the pasta is cooked and the sauce has thickened, add the cooked sausage and mushrooms to the pot. Stir everything together and let it sit for a minute to blend the flavors.

  6. Serve & enjoy! Sprinkle with black pepper, garlic powder, or Parmesan cheese if desired.
