Ultimate Mushroom Grilled Cheese with Tomato Soup (Simple & Delicious)

Tonight’s dinner was quick, satisfying, and packed with flavor: a golden grilled cheese stuffed with sautéed mushrooms, green onion, and melty shredded cheese—served with a hot canteen cup of tomato soup on the side. Comfort food doesn’t get much better than this. wasn't sure how it would come out, but it was amazing and my Dad really liked it as well.

Ingredients:

  • Store-bought mushrooms (any kind—white, baby bella, etc.)

  • Green onion (or regular if that’s what you have)

  • 1 clove garlic (minced)

  • Butter or oil for sautéing

  • Shredded cheese (or sliced—whatever you prefer)

  • Bread (your go-to)

  • 1 can of tomato soup

Instructions:

  1. Sauté the mushrooms & onions
    Heat a bit of butter or oil in a pan over medium heat. Add your sliced mushrooms, chopped green onion, and garlic. Cook until the mushrooms are golden and the onion is soft—about 5–7 minutes. Season with a little salt and pepper if you want.

  2. Assemble the sandwich
    Butter the outsides of your bread. Layer shredded cheese on the inside, then pile on the mushroom mixture. Top with more cheese and the second slice of bread.

  3. Grill it up
    Cook your sandwich in a pan over medium heat until both sides are crispy and the cheese is melted. Press it down slightly with a spatula for that nice golden crust.

  4. Heat the soup
    While the sandwich grills, warm your tomato soup in a pot or—if you’re like me—a metal canteen cup for that rustic outdoor vibe.
