This simple mushroom omelet is perfect when you want something quick, tasty, and budget-friendly. Whether you grow your own mushrooms or grab them from the store, this protein-packed meal is great for breakfast, lunch, or dinner. Whipped this up after a long day, simple but hits the spot.
Ingredients:
3 large eggs
1/2 cup sliced mushrooms (white button, cremini, or your favorite)
2 tablespoons chopped green onions
Salt and pepper to taste
A splash of milk (optional, for fluffier eggs)
1 teaspoon butter or oil for cooking
Instructions:
Prep the veggies: Wash and slice your mushrooms. Chop the green onions and set aside.
Cook the mushrooms: Heat a non-stick pan over medium heat. Add a little butter or oil, then toss in the mushrooms. Sauté for 4–5 minutes, or until they're golden and tender.
Beat the eggs: In a bowl, beat the eggs with a pinch of salt, pepper, and a splash of milk if using.
Make the omelet: Pour the eggs into the pan with the mushrooms. Tilt the pan gently to spread the eggs evenly. Sprinkle the chopped green onions over the top.
Cook and fold: Let the omelet cook for 2–3 minutes, gently lifting the edges with a spatula. Once mostly set, fold it in half and cook another minute.
Serve: Slide it onto a plate and enjoy hot!
