Ingredients:
3 large eggs
1/2 cup sliced mushrooms (white button, cremini, or your favorite)
2 tablespoons chopped green onions
Salt and pepper to taste
A splash of milk (optional, for fluffier eggs)
1 teaspoon butter or oil for cooking
Instructions:
Prep the veggies: Wash and slice your mushrooms. Chop the green onions and set aside.
Cook the mushrooms: Heat a non-stick pan over medium heat. Add a little butter or oil, then toss in the mushrooms. Sauté for 4–5 minutes, or until they're golden and tender.
Beat the eggs: In a bowl, beat the eggs with a pinch of salt, pepper, and a splash of milk if using.
